You will need:
Serves 2
(4) good quality lamb loin chops
(Try 4 Whistle Farm lamb...tasty!)
2 Tbsp. olive oil
2 tsp "Shake, Java & Roll" Espresso Rub/Seasoning
Optional: Thinly sliced onions and/or garlic.
Directions:
Take out the lamb chops from the fridge and let them sit at room temperature for 20 minutes.
Preheat oven to 400F
Drizzle half of the olive oil on both sides of the lamb loin chops and season with "Shake, Java & Roll" Espresso Seasoning.
Heat the other half of the olive oil in a large oven safe skillet (cast iron works great) on med-high heat. Optional: Sauté onions and/or garlic in the oil until semi-soft). Add the loin chops and cook for
2-3 minutes per side, until brown.
Transfer skillet to the oven and cook for at least 15-18 minutes for medium and 20-22 for well done.
Remove from the oven and let the loin chops rest in the pan for 5 minutes.
