You will need:
Serves 2-3
2 chicken breasts (you can also use Tofu or Tempeh)
1 fresh lemon
1 Tbsp of your favourite olive oil
1+1 tsp "Gypsy Twist" Latin Fusion Seasoning
Cilantro for finishing
(substitute parsley if you don't like cilantro)
Chop your lemon in half and squeeze the juice into a small bowl. Set aside.
Chop the chicken breasts into approx 1-inch sized chunks. Turn your frying pan on med-high heat and add 1 Tbsp of olive oil.
Place your chicken chunks into the frying pan and shake approx. 1 tsp of your "Gypsy Twist" Latin Fusion Seasoning all over the chunks. Once the chicken starts to sizzle, add about your half of your reserved lemon juice to the pan. Make sure the chicken pieces are constantly being stirred in the pan so they don't burn. Once the lemon juice has evaporated, add the remaining lemon juice and turn the heat down to low. Stir until the remaining lemon juice has evaporated and remove from heat.
Finish your lemon chicken with another 1 tsp. of "Gypsy Twist" Latin Fusion Blend.
Serve alongside our "Spanish Flamenco" Roasted Veggies.
