KEEP THEM COOL:
Your spice blends, seasonings, finishing salts & vanilla beans away from heat and direct sunlight. A cool, dark area in your cupboard or pantry will extend the life of your spices. DO NOT store in your refrigerator. This will dry out your spices.
KEEP THEM DRY:
Don't sprinkle your spice blends over steaming heat, directly from the bottle or bag. The steam will enter the container and, not only dull your spices but, possibly cause them to become caked in the bottle or bag.
KEEP OUT AIR:
Replace lids tightly and make sure to seal bottles and bags, after use, to keep away moisture.
NOTE:
If your spices clump, give your bottles or bag a good shake before use and be sure to keep them COOL, DRY, and sealed away from AIR.
If you find older spices in the back of your cupboard, try using your mortar & pestle or simple coffee grinder to bring a little life back to them! A quick, re-grind will help pull out what oils are left. If you are using your coffee grinder, just place about 1-2 tbps of sea salt in the grinder and blend. This will help remove most of the coffee bean oils from the grinder. Discard the sea salt, wipe out excess salt with a dry cloth, and blend your spice. When you are done, blend a little more sea salt to remove any excess spice and use your coffee grinder as you normally would.
