This easy, delicious Hummus makes a great appetizer.
For the base you will need:
1 540ml can of chickpeas with 1/2 the liquid
(reserve other half of the liquid)
6 Pita bread cut, like a pizza, into 8 triangles each
3 Tbsp of tahini (roasted sesame seed paste)
3 Tbsp fresh lemon juice (squeezed or bottled)
1 Tbsp of your favourite olive oil
2 tsp "Citadel of Tripoli" Lebanese 7 Spice Blend
1/4 tsp sea salt
3 cloves fresh, minced garlic
Toppings:
1 Tbsp olive oil
1 Tbsp fresh, chopped parsley
1/8 tsp paprika
3 whole or chopped, pitted olives (optional)
Add all base ingredients into a food processor.
Blend on high for approx. 2-3 minutes.
If the hummus is getting too thick to blend, add a little of the reserved chickpea liquid and blend until creamy.
Hummus should be not chunky or runny.
Scoop into a serving bowl.
Drizzle with olive oil and sprinkle with toppings.
Serve with pita bread.
